At the Adobe Inn, Joyce and Terre Bucknam serve up some of the most delicious and creative Mexican food you'll find anywhere in Colorado. Southwestern decor and Mexican music add rich atmosphere as you look out the windows at the surrounding mountains. Entrees include Rellenos, Flautas, Chimichangas, Burritos and Enchiladas served six ways. Each dinner comes with chips & salsa, choice of salad or tostada, refried beans and tomal en elote (corn casserole). The Adobe Inn also has excellent Margaritas and a large selection of Mexican beers.
